What Are Tapas?

The original tapas of Spain were simple, functional nibbles provided to patrons by taverns and pubs to protect their drinks. Over time, the thinly sliced breads and meats were replaced by artistically plated delicacies. Today, tapas are intricately woven into the very fabric of Spanish life – a serving style featuring salty, savory, or sweet delectables presented in a way that encourages culinary exploration – in bite-sized portions ideal for sharing.

Try These Spanish Style Tapas in Miami

The humble origins of the serving style explain why people asking, “What are tapas?” could find conflicting definitions. As a verb, tapas means “to cover.” As a noun, tapas are petite plates featuring bite-sized portions of delectable nibbles. As you’re exploring our menu, it’s easy to see why Rosa Sky Rooftop Bar & Lounge is one of Miami’s most popular destinations for the globally inspired bites our most devoted tapas enthusiasts are fond of identifying and classifying by the way they’re served.

Casas de Picar

Casas de picar tapas are finger foods. With no utensils required, they’re ideal for sampling multiple flavor combinations while mingling. Rosa Sky’s Summer Vegetable Rolls, for example, is a memorable infusion of kimchi cabbage, curried mango mustard, black bean “butter,” and roasted cashews enhanced with the bold, spicy flavor profile of Japanese togarashi seasoning. Our Cuban “Cigars,” on the other hand, feature a flavorful fusion of Jamon, lechon, queso, relish, scallion ash, and dijonaise served in a crispy shell.

Pintxos

Pintxos, also known as Pinchos, originated in the Basque region of Spain. They’re the type of tapas traditionally served on a skewer or pick. Rosa Sky’s Honey Glazed Picanha Skewers, one of our most requested tapas, is served with miso-white bean purée, pine nut tapenade, and piquillo pepper, a sweet culinary treasure with little heat. Patrons selecting our Picana Skewers often enjoy them alongside our Spanish spice-crusted fries. They’re served with Rosa aioli, parmesan aioli, and chipotle ketchup.

Cazuelas

Our hot, hearty tapas are served in a modern version of their namesake clay dishes, cazuelas. Of the many tapas that fall beneath that umbrella, Rosa Sky’s Buffalo Chicken Empanada is the talk of the town. We serve our take on the traditional tapas with mirepoix salad, a mix of finely diced aromatic vegetables. Many people celebrating in our rooftop venue enjoy them served alongside bites of braised short rib grilled cheese, our version of a classic comfort food made with Sullivan St. Brioche and Mahon.
